Make Your Own "Cream of" Soup

I am not the queen of healthy cooking.  Given the choice (which I guess I have, but my health and waistline pay for it) I would eat pasta, bread, cheese sauce, pizza, and french fries pretty much every day.  Another thing I do that isn't very healthy is make a lot of recipes with "cream of" soups.  I  hate spending a dollar of each of them (I know, a dollar isn't much, but when you read how cheap it is to make at home you will certainly agree its to much!) and I hate running out of them and then not being able to cook something.

So I found a recipe for making them myself.  I don't remember where I found it, so I can't give credit where it is due, but here it is.

2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt (or to taste)
1 teaspoon bouillon (whatever flavor you need, beef for cream of mushroom)
1 cup water

Melt the butter in a small saucepan.  Add the flour and salt, stirring until smooth with a wire whisk (make sure its silicone coated if you have a non-stick pan).  Add the bouillon and water.  Stir continuously until its boiling and thickens.  It makes approximately the same amount of condensed soup as a can.  You can then use it like you would use "cream of whatever" soup.

You can experiment with this.  For example, to make cream of chicken you could use chicken broth instead of the water and bouillon.  You could do the same with beef broth, and add mushrooms for cream of mushroom soup.  People add celery salt for cream of celery.  It is really easy, and way to delicious.

It is not really healthy, but it is healthier than the canned stuff, if only because it doesn't come in a BPA lined can, and has relatively few preservatives.  It is REALLY, REALLY high in sodium though, which you could adjust by using low sodium broths, or omitting the extra salt, but you can taste the difference.  The nutrition facts are for the entire pan full, so divide it by however many people you are serving.

God Made You Just Right by Jill Roman Lord - A Review

Most of the books I review are for adults, but I got a chance to review God Made You Just Right, which is a board book.  From the back of the book: You're brilliantly created, and there's no one else like you!  With simple, rhyming text and whimsical illustrations, this book is a welcome reminder for little ones that God created each of us in just the right way. I love the artwork, it is colorful and engaging, which should catch the attention of small children, but still nice to look at for adults.  The text is encouraging and has a good rhyme pattern, which I always appreciate in books for small children.  It isn't a story, but poetry telling children that God knew exactly what He was doing when He created each part of each person.  I love that it talks about the things you uniquely need to be able to fulfill God's plan for you.
