Dinner From The Garden (Sort Of)

So my pathetic garden is actually doing quite well! I went out today and realized that I had TONS of green beans, a zillion tomatoes (not ripe yet though), and a bunch of ripe cucumbers! We had fresh picked green beans for dinner, along with a new recipe for Lemon-Pepper Salmon.

Lemon-Pepper Salmon (adapted from allrecipes.com)

Dinner: Not many green beans for me, I can't stand them, they make me gag :(

Serves 4

2 tablespoons butter

2 tablespoons olive oil

4 (4 ounce) salmon fillets

1 teaspoon minced garlic

1 tablespoon lemon pepper

1 teaspoon salt

1/4 cup water

Heat the butter and olive oil in a large skillet over medium heat. Place salmon in the skillet, and season with garlic, lemon pepper, and salt. Pour water around salmon. Cover and cook for 15 minutes, or until fish is easily flaked with a fork.

No idea on the nutritional value, probably high fat, but its good fats, so who cares? I thought it tasted pretty good, and Michael though that it was AMAZING! Next week I will be back on top of things as far as blogging goes. I have been having a little trouble getting a routine going with the addition of Miss Baby :)

God Made You Just Right by Jill Roman Lord - A Review

Most of the books I review are for adults, but I got a chance to review God Made You Just Right, which is a board book. From the back of the book: You're brilliantly created, and there's no one else like you! With simple, rhyming text and whimsical illustrations, this book is a welcome reminder for little ones that God created each of us in just the right way. I love the artwork, it is colorful and engaging, which should catch the attention of small children, but still nice to look at for adults. The text is encouraging and has a good rhyme pattern, which I always appreciate in books for small children. It isn't a story, but poetry telling children that God knew exactly what He was doing when He created each part of each person. I love that it talks about the things you uniquely need to be able to fulfill God's plan for you. At the end of the book is Jeremiah 29:11, which gives scriptural support to the rest of the book.
