Quick and Easy Moroccan Chicken

Last week I tried a new recipe.  Actually that isn't really true, I kind of half-way created my own recipe.  This is based on a recipe from Cooking Light, but I changed it around.  The recipe was for a rub, but since I HATE touching raw meat, I don't really do rubs (every once in a while I will suck it up and make a meatloaf though), plus my chicken was still frozen, and you can't really rub anything onto frozen chicken. RECIPE: 1 tsp paprika 1/2 tsp cumin 1/2 tsp ground cinnamon 1/4 tsp salt 1/4 tsp ginger 1/4 tsp pepper 1/2 cup water 2 tbsp vinegar 2 tbsp oil however much chicken you want to eat, this is a marinade/sauce, so it doesn't really have to be precise Pre-heat the oven to 350 ° (or whatever temperature you like to cook chicken at).  Mix all the ingredients except the chicken in a bowl.  Put the chicken in whatever baking dish you are using, and then pour the mixture over the chicken.  You can then leave it to mar...

How To Cook Bacon

Hadlee and I were playing with the toy kitchen today.  First we were drinking "delicious" "tea" which supposedly was tea with water, milk, salt, pepper, catsup, steak, onions and various other things.  Then Hadlee brought out the pig and said something along the lines of "We can eat pigs.".  I said "Mmmmmm Bacon!".  Then she proceeded to "cook the pig".  I went and grabbed my camera because the following pictures were to good to not get.  Once she figured out I was taking pictures, she started hamming it up so it got a little crazy.  But before that the pictures were priceless. I think she might need a bigger pan... Baking is healthier than frying One of the Care Bears legs was salt, the other was pepper.  She was using the Care Bear to season the tea earlier too. Recipe Reviews 2/7

I have been a slacker blogger for the last little while, and I totally missed last weeks recipe reviews, as well as this weeks meal plan (which has not been followed, we have been busy this week).  The good news is that I have a few really delicious recipes to share from last week, complete with pictures!  None of these recipes are particularly low calorie, but we generally have them with a salad, and maybe a piece of fruit, so the meal itself is usually right around 500 calories.  UGH!  No matter how hard I try I cannot get this stupid post to format correctly.  I am pretty much inept at html, so I am going to just leave it alone, because the harder I try, the more annoyed I get with my failure!   Quick Chicken Cordon Bleu for Two Really, really yummy!  It wasn't necessarily quick, but compared to actually stuffing the chicken it was really fast.  Ingredients 2 boneless, skinless chicken breasts (tender removed) 1/4 tsp ...

Recipe Reviews - 1/24

So mostly I did another failure week on meal planning.  But I do have two recipes for you, and they are both yummy!  We didn't really have any fails, because we had old stand-bys instead of the new stuff I had planned. Super Easy Pork Chops So these are actually Michael's recipe, but I changed it up a little bit.  He always used Cream of Mushroom Soup, but since I avoid that whenever I can, I made the sauce myself. These pork chops are super easy to make! If you choose to use a can of cream of mushroom soup instead of all the other ingredients making it absurdly easy! This is delicious served over rice. Serves 2 Ingredients 2 pork chops 2 tablespoons butter you could also use coconut oil (slight flavor change) or lard 2 tablespoons flour 1 teaspoon beef bouillon you can also use 1 cup beef broth and not add the bouillon or the water 1/2 teaspoon salt 1 cup water you can also use 1/2 water and 1/2 cup milk if you want it a little creamier Di...

Make Your Own "Cream of" Soup

I am not the queen of healthy cooking.  Given the choice (which I guess I have, but my health and waistline pay for it) I would eat pasta, bread, cheese sauce, pizza, and french fries pretty much every day.  Another thing I do that isn't very healthy is make a lot of recipes with "cream of" soups.  I  hate spending a dollar of each of them (I know, a dollar isn't much, but when you read how cheap it is to make at home you will certainly agree its to much!) and I hate running out of them and then not being able to cook something. So I found a recipe for making them myself.  I don't remember where I found it, so I can't give credit where it is due, but here it is. 2 tablespoons butter 2 tablespoons flour 1/2 teaspoon salt (or to taste) 1 teaspoon bouillon (whatever flavor you need, beef for cream of mushroom) 1 cup water Melt the butter in a small saucepan.  Add the flour and salt, stirring until smooth with a wire whisk (make sure its silicone coat...

Recipe Reviews - 1/16

So my menu planning has not been going so hot.  Or rather my menu following has not been going so hot.  My husband is being a little reluctant to eat "diet food" and things have got switched around a little bit.  So, it didn't go exactly according to plan.  I have made a few things, and I will share them with you, along with if I thought they were good or not.  The good ones will have recipes, the bad ones will have links to recipes if you don't trust my judgement (I am a very picky eater, so my judgement might be flawed). Yummy 1) Breakfast Smoothie     Delicious!  We both really liked this one, although it was a little to thick to drink     without a straw, so I used a straw I had lying around and Michael ate it with a        spoon.  I think I just added to many frozen strawberries.
