Meal Plan - 1/13 - 1/19

Here is my meal plan for this week.  If any of the recipes turn out great, I will be sharing them in future posts.  If you want any of the recipes before I have a chance to see if they are good, just ask and I will add them :)  Some meals are pathetic, and please keep in mind I am trying to get away from processed food, but I am not going to quit cold turkey.

These are just main dish plans.  So it doesn't seem like enough food, but fruits and veggies will be added, as well as rice or pasta when it fits the meal.

I also plan to serve a big salad right before dinner, so Michael and I can fill up on salad before we eat the main meal.

Sunday 1/13
Breakfast: Breakfast Smoothie
Lunch: Probably something crappy like raviolis or ramen
Dinner: Broiled Tilapia Parmesan

Monday 1/14
B: Banana Blueberry Smoothie
L: Caesar Tortellini
D: Penne with Spinach Sauce

Tuesday 1/15
B: Fruit and Cheese (pretty much just what it says)
L: PBJ
D: Easy Slow Cooker Lemony Garlic Chicken Breast

Wednesday 1/16
B: Breakfast Burritos
L: Ultimate Chicken-Pasta Salad
D: Teriyaki Steak Lettuce Wraps

Thursday 1/17
B: Green Smoothie (never tried a green smoothie, we will see how gross it is...)
L: Tuna Sandwich
D: Baked Pork Chops

Friday 1/18
B: Strawberry Oatmeal Breakfast Smoothie
L: Popcorn Party Day (I watch a movie with the girls and we eat popcorn, cheese, fruits and veggies)
D: Frozen Pizza

Saturday 1/19
B: Sweet Peach Smoothie
L: PBJ
D: Easy Slow Cooker Lemony Chicken Breast (Yes, I know its already planned for Tuesday, but I can't really make a portion for two people in a slow cooker, and I can't really have it sit in the fridge for a couple weeks either.  Hopefully its not gross.)

SparkRecipes.  Almost all of them were "diet recipes" so they used non-fat milk, yogurt, mayonnaise, etc.  I would rather have the extra calories and get all the goodness of the fat, along with less chemicals and processing.

  2. Rachel, did you like the Broiled Tilapia Parmesan? I tried it tonight (the recipe off the site you posted). We loved it. I made a little too much "sauce" because I only did 3 fillets, but it was way better than the other way I make tilapia. And it took much less time. It's a keeper for us. Hope you guys enjoyed it too. I really like the site you mentioned, I have found many recipes I want to try already there. Tomorrow night I am going to try Honey Lime Chicken Enchiladas.

    1. I ended up having the salmon recipe I had planned for a different day. Michael is being a little unenthusiastic about my getting back into meal planning. For instance tonight we were supposed to have Penne with Spinach Sauce but ended up switching for Friday's frozen pizza :( He isn't digging the "diet food" I am making. I have had the Broiled Tilapia Parmesan quite a few times (from various websites, not the exact recipe), and its actually one that we both really like. I always end up with a little to much sauce too. The salmon I made was really gross actually, and we ended up just scraping the sauce off and giving it to the dog, and eating the fish plain.

    2. Oh sad about your salmon. It is so discouraging (to me at least) when I finally try something new and it doesn't turn out like I thought it would taste. I went shopping at Waremart today (with my coupon)and got a bunch of staples I was running low on and some ingredients I didn't have for recipes I want to try.

    3. I am fixing Tilapia tonight and decided to try the Parmesan recipe. My husband and daughter are fans of anything Parmesan. Eager to taste it.

Why I Choose Christian Light Education Homeschool Curriculum

Last summer I decided that I was going to homeschool our foster daughters while they were on summer vacation.  There were two reasons for this: 1) Two of the three girls were behind academically.  I really hoped that by working through the summer we could help them get on track for the next school year.  They left our house soon after school started, so I don't know how well it worked. 2) I don't allow my children much in the way of screen time, and these girls were accustomed to having TV and tablets in their rooms all the time.  So they never really knew what to do with themselves.  I figured school work for the morning would help with that dilemma. Choosing a curriculum was difficult for me.  I know that some people bounce around and change curriculum a lot, but whatever I got, I hoped I would like enough to use the non-consumables with Little Guy.  I don't like wasting money, and I hate the idea of some topics falling through the cracks because different curricu

Things That Annoy Infertile Girls (or Maybe Just Me?) - Flashback Friday

Is Mother Goose Time Worth The Money?

Last night my husband asked me if I thought that Mother Goose Time was worth the money if I didn't get it for free.  I think this is an excellent question, and one that people probably want to know. How Much Does It Cost?: Mother Goose Time costs $75 a month for one child, including shipping if you buy it month to month.  If you can order and pre-pay ahead of time, you can save up to 15%, depending on how far ahead you pre-pay.  If you have more than one child using the curriculum it is only about $5 a month to add a child.  Many of the products provided cover the entire class, including manipulatives and story books.  The things that each child needs come packaged in their own bag for each child. What I Think of the Curriculum: The curriculum is great.  It is thorough and engaging.  It provides me with ideas and supplies to teach my son things I never would have thought to teach him, but will make him a very well rounded person.  He now talks about things he never would ha
